Welcome to Pa Daeng Jin Tup (, a Northern Thai restaurant in Chiang Mai, that s known for its sledge hammer pounded meat jerky! The Uncle and Aunty who run the restaurant, also have incredibly bubbly and friendly personalities, so meeting them and hanging out with them is a highlight along with the food. We arrived and immediately began ordering most of the dishes they had on their menu for the day. Uncle made sure to tell us that unfortunately due to the day and the situation (post Covid lockdown, he didn t have all the dishes on his menu that he often has. Even so, we were able to order quite a selection and quite a variety. At Pa Daeng Jin Tup (, you ll immediately notice the classic Northern Thai food grill very slowly roasting and smoking continually over low charcoal - the meat stays smoking until you order it. Once you order it, they carefully select some pieces of tough meat, put it on the cutting board, and Uncle starts pounding it with his signature sledge hammer - it literally is a sledge hammer, meat tenderizer! The result is a piece of meat that s so fragrant, and still slightly chewy - like jerky - but fun to eat and full of flavor. Additionally, you eat every bite with Uncle special sauce that contains bile to make it bitter and diversify the flavor. I also really loved the galangal chili dip. What a meal and what a time to hang out with friends, have some drinks, and some seriously tasty Thai street food

i can imagne the fermented, lightly gamy flavor of dry meat and dehydrated fat ( it is also part of the ricefield culture here in the philippines as therecwas no refrigeration. i guess methods and inredientscare similar! i love your pak kiang plate. the fresh herbs. and the dried chili paste. wowww! then that frog salad ready to jump with the flavors in the mouth!

It s not post pandemic or after Covid. it s still currently and actively going on whether or not countries are locked down. Mark please still advise safety in your videos. It s great you and your family get to travel to rural places that aren t hotspots but a lot of us can t and some live in hotspots where there s a lot of infection spreading in the community.

JIN means meat and Som means sour. Try pressing your thumb to make a dent at the middle of your sticky rice ball, it will increase the surface of the riceball and make the dry Nam Prik sticks better. My mom loves to stuff JinSom and other food inside the riceball so kids can run and eat at the same time.

Man is the worst animal God created. When someone dies in our houses. how fast we want to put them in their rest place. yet animal who knows he's going to be slaughtered. how many painfull thoughts he is going through. Sad. no respct for the dead.

Mark you have lived in Thailand long enough that you should know WAI with one hand is a bad manner. If of any circumstances don't WAI at all. Just say thank you or whatever.
