Its not zero gravity. If it were zero gravity, the water would pool at the top of the water bottle and be unable to pour out. This is caused by an updraft of Air rising up from the Black Canyon. The canyon is like a large natural wind tunnel and the dam is like an air foil.

Somebody explain this. Say you're standing under a tin roof while it's raining. You look up to see a leak in the roof and the water is running down the rafter. on the BOTTOM SIDE of the rafter. how does it cling to the under side without falling?

I have known about the wind effect when trying to pour water from the road. The wind hits the face of the dam and flows upwards. You can't even get a piece of paper to fall.

You get the same result standing the bay side of the Golden Gate Bridge. Wind coming from under the bridge shoots upward as it emerges from below on the lee side.

Wind is hitting the dam wall and forced upwards because of the shape of the wall. This creates an up pressure which makes the water Float.
