You should be using cheesecloth instead, you don't get sulphates in your ghee if you cheesecloth instead of using the paper towel. Besides there are other chemicals in the paper towel, when you use fats, it can absorb that crap.

Sauteing with Olive Oil on medium heat is fine. Blanket statements like -You don't want to cook with Olive Oil Ever- are false. I now call into question the rest of your advice in this video.

Just made homemade butter the other day, i will try to make Ghee from it.
After you strain off the milk solids, can you use them for anything?
