Red cabbage is an indicator. It turns varying shades of red, based on how acidic something is. And it turns more and more blueish when something is. The opposite of acidic. In my home country, depending on where you live, Red cabbage is actually prepared differently. In my area, we just call it 'Rotkohl' (Red cabbage) because we cook it with apples or vinegar which makes it red, because of the acidity. Other places call it 'Blaukraut' (blue Kraut / cabbage) because they add sodium bicarbonate and juniper berries (sometimes apples too, but not enough to make it red again.
If you want to do something fun with your kids just cook red cabbage in warm water until the water is dyed red, put it in different glasses and let your kids throw in different things. Lemons, washing powder, vinegar, soap, yada yada yada.
