When he talks about meat temperatures I kind of wish he would say what temperature he took it out at, AND what temperature it was when slicing in. Medium rare is the goal but the temperature to remove the meat from the oven or pan seems to vary depending on a lot of factors.

If you are doing food from The Wire, please figure out how to make Scrapple. I can't get it where I am and I have failed to come up with a recipe that tastes as good as in Maryland.
