Jean: Living in Asia, I can tell you that Chef Johns knife skills, although not unique to himself, are definitely in my top 1% of Chines chefs that I have seen working before. His dishes are also very authentic, but he doesnt shy away from sometimes experimenting and putting his unique twist onto a not quite traditional Chinese type of meal.
