4 Levels of Custard: Amateur to Food Scientist Epicurious PeacefulDeibiddo: Thank you Lani, this is the first 3 levels video I've seen in a while that I've been impressed by. Mostly thanks to you. You shared tips and cooking techniques and explained them. You didn't just say we're cooking this in a water bath because we need to. You told us what a bain-marie is called and why we use it. Sharing warnings of possible pitfalls, tricks to make life easier, and a complex unique and interesting flavor palate for your dish. Once again thank you. Also I love Emily but I'm pretty sure she leveled up like 5 videos ago. Remember french toast when she dipped sandwich bread into egg and milk and put ketchup on it. there hasn't been a real level 1 cook in a long time, a real level one would have used instant pudding.

Daniel: I don't know the exact recipe, and I suspect the process is pretty different, but my mother's caramel pudding looks similar to your flan! Have you considered cooking the flan in longer, rectangular bread pans instead of the large, square-ish pan, to make flipping easier? :)

My three favourite cooks! Emily reminds me of Jessica Day from New Girl! She's def heading to Level 2 in the future! Daniel. sigh pretty boy who cooks. just eye candy. Lani is just badass. my fave chef on Level 3 next to Frank!

I don't think I've seen a higher level chef comment on another in the same video before; a nice change. They could also integrate the scientist's explanations as the chefs do their procedures.

I thought Emily became a level 2. what happened! Also:
Emily: I'm sure the commenters will tell me whether or not this is a gross way. When you're so level 1 that you stumble into level 2.

i really like the level 3 chef and her personality. i find it funny that she did exactly what i do when i can t use the proper cooking torch and whip out a proper industrial workshop blowtorch

How ironic, I just got a 2nd degree arm burn making creme brulee, after picking up a torch that I thought had cooled. (I had put away dishes and everything. still to hot)

Missing Lorenzo. he s way more carismatic than the second guy in this video ( he s cool too but he s just there cause girls love him and are just waiting to see him in a new video. )

8: 34 For my garnish, I have some fresh raspberries. They wouldn't give me blackberries, I asked, they wouldn't
LMAO, I love when they acknowledge the jokes we have for them.

Have you ever looked at the ingredient list of non-dairy topping? A degree in organic chemistry would be helpful.
I use whipped cream. It's almost as quick and tastes better.
