A Christmas take on a classic dish. Gangus Khan: Nice to try, but nothing like the Beef Wellington we served at 70s Chez Cary in Orange California under the Executive Chef Fred Hossli Apprenticeship. I still have an original Menu w/ Gold Tassel Binding and Custom Chez Cary Matches from cooking there No prices on womans Menu w/ Chateaubriand at 25 for two. what a Bargain. plus top it off with Souffle au Grand Marnier and maybe a priceless 1939 Chteau Lafite Rothschild. I bet no one can get that quality combination and price any longer: D

So. living in Abalamma, I had to cut a couple of Christmas corners. Pie crust instead of puff pastry, had to boil my own chestnuts, they wanted 80 a pound for tenderloin, so I rolled a sirloin roast up and tied it. Did all the other things with the egg wash and mushroom grinding. I ended up with a rare Sunday roast with a pretzel crust and mushroom/ham stuffing. That dude was gone in 15 minutes. I calculate that my 90 lb Mother ate at least 3% of her body weight in Beef Wellington.

The chef in your Dubai restaurant should watch this video. I was there yesterday the Wellington was terrible it seemed like it was frozen and the taste was very bland.

Or start with a well dried sous vide cooked piece of chuck. Far less expensive and the meat is tasteful. Works wwith salmon filet core too, but no chestnuts.

I love this and love beef Wellington but I would be afraid to try this because I may ruin a very good piece of meat but your top notch.
