The Best Dairy-Free Chicken Alfredo Emily Luceus: For those saying thats not Alfredo thats insert technical term here remember: 1. This is probably closer to an Italian American Alfredo than an actual since its much easier to remove dairy from. Vegans/people allergic to dairy cannot consume a traditional made from parm no matter what. Lactose intolerant people ironically can consume a traditional (as in no cream) since usually parm is relatively harmless compared to others. 2. In dairy-free cooking you look for a dupe of the desired dish, not what is technically correct. Its like nice cream. Not at all a traditional ice cream, but more or less behaves similarly so long as you can take the banana flavor. This is probably the same case but with a probably more chicken-like taste. -your friendly lactose intolerant

I like making mine with cashew nuts milk instead of coconut, because cashew nut has a special property that helps it emulsify by itself. This way I dont need to use flour as a thickening agent and I can substitute the pasta for a gluten free one, making the dish completely gluten free. Also, cashew nut milk has a milder flavor compared to coconut milk, and if you use a bit of nutricional yeast instead of the chicken/vegetable stock, you can make it not only gluten free but also vegan. :) If anyone is interested and dont know how to make cashew milk, Ill be glad to help.

Yeah, gotta call BS. It will not taste like alfredo without parmesan and by including coconut milk. Unless coconut milk is cooked for a long time (i. e. baking, it will still carry some coconut flavor. I have subbed coconut milk in skillet recipes before and you can definitely still taste it. I would use cashew milk and nooch for a closer profile. Also, to veganize: Make sure your pasta doesnt have egg, haha.

I made the vegan version (no chicken. The coconut milk started to turn clear after heating the pan and mine wasnt as thick. My coconut milk was from a carton, not a can. Mine turned out more like a clear broth. Immediately after adding the stock and coconut milk, pour it over the pasta and dont reheat the pan.

Idk why Im watching this when Ive already perfected my own dairy free alfredo that doesnt include coconut milk and does include vegan cheese. Its nice to see a dairy free recipe that doesnt involve pine nuts to make a cheesey taste, tho, for those of us allergic to more than just dairy

So you can call it chicken alfredo but it definitely doesnt taste like chicken alfredo. If you put two pieces of pizza together it doesnt make them a sandwich they are still Pizza. This doesnt smell or taste like alfredo. Still a bomb dish though
