In some of those recipes it said lite soy sauce, do they mean like the low sodium lite soy sauce, or is it something completely different? If so any brand suggestions or amazon links?

In China they dont use miso but sesame paste is popular. The flavor is excellent. If you dont have Chinese sesame paste, tahini would do.
