It's soft because it just shed it's skin. That's soft shell crab. It was probably eating it's old skin which is what they do to help there new shell grow. Like chooks eat the egg shells.
You probably shouldn't be hunting for them while there shedding.

Dude soft shell blue crabs here in the U. S. are a delicacy. It usually happens to all of them at the same time. We also call them shedders, because they shed their old shell and the new one is soft. Takes a little while until they harden up.
