I'm surprised your wireless is very effective. Especially 5G. You built a Faraday cage. I can't see the throughput being anything to brag about. I've built several shops. Every single one becomes a wireless dead zone the second the steel goes up. I always add extra conduits in the slab. It's a near zero cost feature that pays HUGE dividends when the itch to change strikes. Bringing in Ethernet, fiber, coax, is a low effort project. Plumbing for a bathroom. not so much.
8 slab is overkill, but if it doesn't kill the budget that's a good place to spend. Foam was also a good place to spend. Glancing over what I can see it looks like your contractor was competent and mindful. Everything looks straight and done with purpose.
Wood paneling will decrease your sound quality. But all of your racks filled with 'stuff' will counter it.
Low ceiling height makes managing the environment MUCH easier and more cost effective. You have a well sealed envelope. Strongly encourage monitoring air quality.

Why is the foam exposed Is that a budget thing or for another reason It gives more risk to have small particles in the air if yo hit/scratch it by accident. I hope you did you research on the kind of spray foam they used because in the area I live we had some bad cases of health problems for some folks after using spray foam. No idea what kind is used over there of course.
Just concerned. Not trying to ruin the party or something. Have fun with the new place. You deserve it after that long grind; )

Honestly, you can always add things like plumbing and wired networking later on, especially since you're still at the phase of just starting to become one with the space. It's hard to know exactly where and how to run additional utilities until you know how you really want to arrange things. Take your time. Make it what you want it to be. That said, I imagine that you'll probably decide you want to bring in plumbing the first time you're caught out there in the rain; .

If you aren't going to dig fir an ethernet cable then obviously a wifi bridge is a good plan.
I use a Unifi AC-AP-PRO unit for my garage. It provides wifi extension and a physical port for the bridge thst requires no config. This is of course for the Unifi architecture but im sure other routers probably have tte same capabilities.

The biggest thing for you in NC isn't necessarily the heat, it's the changes in humidity. I would look at figuring out the best option to run those mini splits all the time in the summer to keep the humidity in check. If they can't keep up maybe a dedicated wall mounted dehumidifier might be worthwhile for that space.

These are thoughts that probably everyone has when they have such a plan. In a few years, you'll wonder why you ever doubted it.

I've enjoyed your videos for many years and was devastated when the storm happened, and to see that you've made lemonade from that situation and have your own unit building is so awesome to see. Dude, speaking from experience. Do not run ethernet cable, run fiber. Because of physics, lightening came in on the buried ethernet I had run between the house and the garage, about 100 feet. Took out a lot of things in the house as a result. Replaced with fiber and wasn't much more expensive in the long run.

From an HVAC technician point of view you’re definitely gonna want a back up for that air conditioner in my air conditioner I mean mini split. Over insulated space like that with a failed air conditioner is a mold recipe for disaster. Get a back up air conditioner on a separate power if possible, even

An idea for the washbasin. Should you choose to use one, might i recommend a laundry/utility sink Some (myself) refer to them as slop sinks. They have large, wide basins and are incredibly useful for a wide variety of things and are fairly easy to move and replace/repair should one need to.

Loooooooool maybe literally a ton of gravel, dude that's maybe 100 tons of gravel. That truck will have about 8-10 tons in 1 load, so if the came around 10 times I'd say about 100 tons of gravel. My tiny garden trailer carries 1 ton and that amount doesn't do much at all

Definitely add a BATHROOM, with a bathtab-sized walk-in shower, near the loading door. The shower is going to be important for cleanup of incoming stuff.
And walk outside in the winter, between the buildings, just for a bathroom break You are going to regret it.

this is awesome and I'm so glad you're realizing a dream! real talk, since you're still in the building stages, add 1) at least cat 6a ethernet 2) a water connection (at least a sink, a bathroom would be a great idea) 3) are solar panels feasible

Be careful running ethernet from the house to the shed - 8bitguy had this issue where lightning was involved and fried his routers, even with running in a trench. Run fibre between the two and don't skimp! He has a whole video on this haha

Some Consideration when adding networking if you do add a switch may want to go with a Power On Ethernet switch ( POE) to power some cameras and other smart devices that you might like to have down the road.

If you don't want to trench a new underground line for fiber/ethernet from the house, or if you want to wait until you are also digging a trench for water lines, point-to-point dishes have come a long way.
