I have an idea of what could have happened to Jasmine's mother.
I do believe Jafar killed her so here's what I'm thinking:
Jafar could have tried to kill both the sultana and Jasmine so that when the sultan died, he'd have no heir and Jafar could take over. Jafar may have tried to poison the two by sneeking some kind of poison into their drinks. The sultana could have taken a sip of her's, tasted it, relize it was poison, and before dying she could have slapped the drink out of Jasmine's hands so her dear daughter wouldn't die too, and thanks to her protective father, Jasmine stayed alive and safe from Jafar.
Now, this is just an idea, I don't know if I'm right or not but that's how I think it could have been.

Jasmine's mother died when Jasmine was three years of age, so she had a childminder to look after her while the Sultan was away.
A childminder is a child care worker or babysitter.
