Delish Test Kitchen Manager, June, is making light and fluffy Parker House Rolls from scratch Elissa: I have made these twice in the past week. The first batch wasn't that great so the second time I had this video playing so I could follow along. The results were better but still not great. June said that mixing the dough in the mixer should take about 10 minutes. Mine was still rough and easily tearing at 10 minutes. I probably had the mixer working for another 6 or 7 minutes. The dough was a lot better but still not as smooth as hers so I kneaded it for a few minutes as well. Do you think it would be okay to mix even longer? Or doesn't mixing and/or kneading it eventually break down the gluten? Hers looked so good!

June has such a cute personality and smile when she does smile. Also, I do not hear the difference between EAST and YEAST. Every sounds Greek to me: ) Love her recipes - YUMMY! There is no guilt about condensed milk - it is a childhood treat. Feel bad for those folks that never had condensed milk. They do not know what they are missing!

I think condensed milk on bread, especially toast is an Asian thing. I-m an American-born Filipina and grew up with condensed milk toast for breakfast and afterschool snacks. Love June-s videos! Only video content I watch on Delish.

great job. I still need precise definition of body temperature--I'm 95. 9 F regularly and lukewarm. I know that after you have succeeded a dozen times, these vague temperatures don't matter but I kill yeast!

The good kind of guilt. Yeeeeek. I dont think you have the Parker House roll history correct or recipe. eggs and cream were used back then. and all that dang butter. Maybe it was the potatoe chip history.

I was reminded of that wonderful book -A Tree Grows in Brooklyn- of how Francie, as a child of poverty in the early 1930s loved the luxury of having condensed milk when the family could afford it.

I love these videos but find it so frustrating that June cooks by weight, but the printed recipes are always by volume. Can you include the weights on the recipes?
