Make Seafood Paella! Our friends came to visit from Spain and taught us how to make paella. It's a little tricky, but worth the effort to get it right Donna: Some quantities for a quick reference:
- 1/4 cup olive oil (or lots to really slick the bottom of the pan)
- 1/2 onion
- 3+ cloves of garlic (from what I saw)
- 2 med. calamari per person
- 12 oz/340g jar of Soffrito (tomatoes, onion, garlic)
- Black Pepper, Cloves, Saffron
- 150 ml arborio (or la bomba) for every 2 people
- 450 ml warm seafood stock, fumet (or other stock) for every 2 people
- 2-3 (whole) shrimp per person
Making this for my family tonight for Christmas Eve! We always make paella but I tried this version recently and I must say, it is a huge upgrade. Give it a go! Happy holidays.

I like the style of the casual get-together!
I've had a true classic Paella only once, at the historic Columbia restaurant in Ybor City, here in Fla. It was incredible, with calamari, mussels, shrimp, scallops, and a couple of other things I wasn't too sure of and was probably better off not knowing. I've never had anything like it since, nor have I had the slightest idea how such a mystery is created. This looks like exactly the concept, brought together so I can see how it works and builds. I love it!

Question about the crust at the bottom of the pan- when you say it's 'charred' is it just crispy and golden brown or actually have a charred taste? Because I've accidentally of course- burned right before and gotten a crust on the bottom and it didn't taste very yummy. I'm just paranoid about that happening if I make this. This looks Sooo amazing though! I love how authentic this was! :)

This was pretty cool, it actually shows the live experience of cooking with the familia! Everybody has their own special style in the kitchen and it's cool to see you didn't seem like a know it all. which helped out the whole presentation as a whole. I thought it was sugar, spice and everything nice. (-_-)

i was just thinking of trying paella for the first time and in the same week you upload this video. thanks hilah! is there something we could use to substitute the sofrito? do you think red pesto would work? or perhaps tomato paste with some other ingredients?

On a Side Note: I can finally remember how to spell -Paella- and the first thing that came to my mind before y'all started cooking was a FLASHBACK from the TV Show Seinfeld. The one when George's Mom cooks too much Paella. (-_-)b It's a funny word.

I'd love to see some more videos like this Hilah! It was all totally authentic and reminded me of what it's like when I've cooked with foreign friends who are watching my every move to make sure I do it correctly.

This video reminds me of when my family would get together and cook. On my Dad's side of the family some people were from Argentina so almost everyone would be speaking spanish while they cook.
