Minestrone Soup (Can you try my)
Ingredients:
32oz broth
28oz Tomato sauce
1 pkg Tomato flavor hotpot soup base
1/3c dried Soy beans
1 can kidney beans drained/ rinsed
1/3c diced carrots
1/3c peas
1 can green beans drained/diced
1/2 an onion diced
3 Celery stalks diced
4 cloves garlic minced
1/2c mushrooms (optional)
2-3 bay leafs
Salt and pepper to taste
1/3c mini shell pasta
Directions:
Simmer soybeans separately on low heat for 2 hours. Combine all other ingredients in crockpot except pasta for 3 to 4 hours adding soy beans when cooked. Cook pasta separately and add after rest of soup is cooked. Enjoy!

Here’s a HUGE challenge for Sam:
My father is deathly allergic to onions. Damned near everything includes onions (mire poix, anyone) or onion powder. He suffers horrible gastric distress whenever he’s been onion’ed.
What are some substitutes for onions that can fill in Note - all alliums are banned. Shallot, green onion, etc. But he can have garlic, so allicins are fair game.
I’d love some help with menu planning for him.

Mexican reporting. enchilada means pepperade or enpeppered, old ladies used to fried the red peppers on porks fat or oil, the porks fat got red and hot with the red peppers, so you pepper the corn tortilla when you quickly dip it into the fat, to soften it, color it red, and season it, then roll it with fresh cheese or chicken. Thats an enchilada. That been said, i would totally wolf down that rice.

Every fall I get about 6 dozen ears of the best corn I can find and grill them all with husks pared down some. After that just cut off the kernels, vacuum freeze to the size bags you need for your family and put them in the freezer for winter meals. All mine lasted through June this year, and the flavor stays the whole time. A real time saver when you want corn later on.

Leave the husk and silk on when cooking sweet corn. The silk will be easy to remove and you'll get all of it. Also, the sooner it gets eaten after being picked is best. The sugars start turning to starch within a few hours. Best case scenario is growing your own and picking it right before cooking. You'll never believe how much better it is!

Yeah, I'm not microwaving corn with plastic bags. Back in the early 2000's i worked at a gym where the owners kids melted their crayola crayons in the office microwave for art experiments and my lunch always ended up tasting like crayola crayons thereafter. No more microwaves. Can imagine your corn takes on the flavor of your plastic bags.

Unrelated to this episode: I made a batch of 70 of Sam’s meatballs this morning. When my wife got up this afternoon she went directly to the freezer and pulled five out of one of the divided batches like a five year old finding the halloween candy. these are really good! I will try this one in the near future. gerrounteeed!

My weird wife will NOT eat chicken or pork, which kills me because I do all the cooking. I was in the US Submarine service for 21 years as a cook and beef, beef beef gets tiresome. Even worse is she doesn't like spicey food. I told her hot sauce only goes so far.

Thank you for helping me pick out what to make tonight! Follow Up: I just made this recipe and the fam loved it! I added a can of beans and subbed the verde salsa for a can of enchilada sauce. It was super fast and easy with very few dishes to clean!

2: 28 Sam, you should get away from Pam spray, it has propellants in it that are nasty, not to mention crappy oil. Chosen makes an avocado oil spray with no propellants that’s way better for you.

The chicken is fantastic, everyone says so. The Corn is tremendous, Mexico paid for it by the way. And the cheese. It's the greatest cheese you've ever seen. And it's all in the big beautiful Bowl.

I'm making this for dinner tonight. I added a can of Rotel tomatoes to it just because! If it tastes as good as it looks and smells, I can see it being in the monthly rotation!

Crawfish, from the frozen section, would work in this also. Actually, can you guys do some crawfish dishes (The Ninfa's crawfish enchiladas could be an ok starting place)
