That new kitchen looks pretty awesome, Hilah. Lots of lovely space, and so light! As I'm on a low-carbs diet right now, I'm looking for this kind of food, and when I get ravenous, about 1a. m. (i. e. right now) my reaction is to summon up Hilah or Laura V. and do some _virtual_ eating. I think I must have a strong masochist gene! That is one fine steak right there.

Great video Hilah, the rib eye recipe is right up my street! Cant wait to try it. You mentioned that you use your finger to test the steak. How can you tell it is medium by touch? What are the indicators? I personally use a Chef Remi Cooking Thermometer that i bought on Amazon for about $15. It has never let me down. Do you use ever use a cooking thermometer?

I am not a big fan of steak but the moment you said coffee-crusted I immediately remember the steak my dad had at a chophouse a couple years back that I got to try. Coffee-crusted steak, carne asada, and filet mignon are the only steaks I like.

I'd just like to say that I love your intro. The music is fun and the video is attractive. There's something very appealing about slicing citrus. And all the other foods in it look nice. It's an intro I don't mind watching over and over again!

Tried out the recipe this evening(minus the butter, since I didn't have any jalapenos on hand, and it was DELICIOUS. I was skeptical about the coffee grounds, but it turned out wonderfully, glad I gave it a shot. Amazing as usual, Hilah.

I love a good ribeye! Medium rare, thenkyew. I've heard of using coffee in rubs, but I've never tried it. You've convinced me that I must, dangit! And the compound butter treatment looked totally awesome!

Been a vegetarian since 98' 99? Been a line cook for years. Bought your book. Awesome. (Carlos will be pissed at the way you cooked the ribeye) Question? What did you eat first? Chicken stock?

Hmm, I've never heard of using coffee grounds as a spice rub, does it end up tasting like coffee once you cook the steak, or does it just add an earthy kinda rich deep flavor to it? Im so intrigued.
