My mother made pimiento cheese from my earliest memories, and I don't remember ever not liking it. She grated Colby cheese, added a little mayo, a little mustard, and the drained jar of pimientos. And she would dice up a dill pickle in it. I don't remember much else except that I'd chow down on it. I like the extra twists you add!
We mostly made sandwiches with it, and occasionally piled it on burgers and let it just start to melt before we'd slap it on a bun.
I haven't made it in forever, and the last time I tried some from a deli, it bordered on inedible. Now you've got me fired up to make a batch of the real thing.

I love pimento cheese and grew up loving it! My kids. not so much. (Leaving more for me) Pimento cheese sandwiches in summer, when they got warm and melty. I always loved that. Of course an icy cold pimento cheese sandwich on a summers day is just as good! Never enough Pimento, Hilah. When are you coming back to cook for us?

I need to make this so bad. My grandmother used to make it all the time but never wrote down the recipe and as you said the store bought stuff is always really sweet. I find that happens a lot, especially with like pasta sauces, they are all so sweet.

However, I'll have to replace some of those peppers you used, since they're not something you can easily find in my part of Europe. Thanks for describing the flavors, it helps a lot!

Sounds great! I just like spreading pimento cheese on crackers for a snack. Putting it on a sandwich is always good too instead of just plain mayo. I am so glad you shared this recipe!

Hot and Delicious, i'm sure the pimento cheese is as well. In SC we can buy some quality -artisan- stuff with jalapeno's and or bacon that are amazing. But maybe i'll try this one.

Hilah, we found a great store-bought pimento cheese at Costco. the brand is -Palmetto Cheese. - Not sweet at all and has a bit of spicy-heat to it.
