You can make Pesto from loads of store cupboard bits and pieces. There is no one better to show you how to make pesto than Gennaro Contaldo, and if there is, I don't want to know! Not only does he give you the classic Genovese pesto, but two other unique versions as well, each one entirely different to the last. OH MY OH MY! Stir through pasta, add to grilled or roasted meat or veg, or simply spoon onto crusty bread - the simple things are always the best!

Great pestos, however I need your help. For the walnut pesto. what does he add to the mortar after crushing the walnuts? Sorry, but I don t get it, maybe because of his lovely accent. Other than that, I will try them out, all 3 of them. Just need to to shop for a few ingredients first. great! Thank you so much Gennaro!

Isn't the second one just called Pesto Rosso and Calabria is with peppers? :D None the less, I just made he second one and it was DELICIOUS! I had to use dried Chilis and a food processor bur it worked out beautifully! Soooo tasty!

If my brother is allergic to nuts, can I remove the pine nuts from the 1st pesto and it still taste good? (Well I'm sure it would still taste good but why are pine nuts needed in a pesto anyway )
