Gennaro's back and this time he s on the end of Southend Pier cooking up a storm! This is a spin on an Italian classic - Southend Vongole! Using a very popular seaside snack - this cockle, tomato and smoked cheese pasta will not disappoint! Vladimir: Ciaooo Amico Gennaro: ) thank you for the all recipes, could you please show us how to make Tomato/Mascarpone sauce: ) I tried to make it with plum tomatoes but i am assuming it should go with Passata instead. Idiots who cook Italian food in India (even in big name restaurants) think that Italian means lots of cream and cheese. When I give my friends a true taste of Italian food which is just pasta water, olive oil, garlic, fresh or dried herbs, and very little cheese, and that too mostly hard cheeses like Parmesan or Pecorino, they re surprised by how light and simple it is. Italian food is magical!

Stay away from those northerners Gennaro. Look at what they did now, they shut down the whole country. That is in case you are recording this in Italy otherwise it's okay. And to those half Germans up north to you I say.

Whenever I watch these videos and I see Jamie or Genaro using metal utensils on those expensive Tefals. I get a little anxious, not going to lie! I wouldn't have metal utensils anywhere near my Tefals!

I keep hearing people say that you shouldnt mix dairy/cheese with seafood but I mean. look at the dairy based dishes. Clam chowder, tuna casserole, lobster pasta. just to name a few.

Please, use GreenPan, they have a ceramic layer, instead of unhealthy Tefal. They can stand metal, cleans easy, and can stand any heath. Tefal isn't good for pure cooking.

if the cockles were that good why did he add all the extras? in Italy it would just be parsley, garlic, chilli, white wine, no tomatoes or anchovy
