I actually did this the other day before I saw this video. However I used frozen raspberries instead and it was SO good, but I'll definitely try cherries too! :) Also, I didn't let the coconut cream freeze completely (just under an hour in the freezer) and it blended quite easily, which a smooth and creamy consistency!

I think this is a brilliant recipe, my only problem is the coconut milk you are using. It is the worst possible product on the market. (Ingredients: Coconut Extract (56%, Water, Stabiliser: E466, Emulsifier: E471, Antioxidant: E330) It is not even real coconut milk. From a super healthy dessert I expect a bit more.

Really have a hard time with him calling this ice cream. Since it's really not, it's like making risotto but using potatoes instead, and still call it a risotto. Don't get me wrong, good recipe and brilliant alternative for a dessert if you are a vegan, can't process dairy or something else.

I really want to try this, but I don't think my blender is all that powerful, and neither do I have a food processor. Could I possibly add a splash of unfrozen coconut milk into the whole mixture so that my blender wouldn't self-destruct? Or are there any other possibilities? Thanks!

Hi Tim, this is awesome thanks! The kids absolutely love it plus it can be done with a never ending list of combinations, my favourites so far have been with cocoa mixed into the coconut cream or with caramel also blended into the cream (Salidou which is a salty caramel paste, YUM!

Does it matter if it's full fat coconut milk or not? Most ice cream recipes require it, but they also separate the fat from the water. If you got a recipe that's loaded with iron, that'd be great. I'm anemic already, and I'm tired of eating swiss chard in everything.

I tried this last night. I couldn't get my hands on cherry's (fresh or frozen) so I used blueberry's and the juice of 1 lemon to give it a little kick (not that it was too citrus-ie) but it was great, I will definitely do it again and try the cherry version as well.

I think pure coconut milk would work better, the one which comes right from the nut (you can get it with a juicer. Because generaly you don't get the whole stuff in a canned coconut milk, like the fat for example and there is often a water percentage in it.

Tooks good and definately a good alternative for the one using classic cream but its hard to come by real/not hellishly overpriced coconut milk(where i live. And even if im not a vegan i would definately try it having a chance.

Ok so I made this with mangos instead of cherries bc that's what I had. Really yummy, but I added a little honey (I'm not vegan) b/c I think the bananas weren't ripe enough. Anyway, it was delicious and really easy. Thanks very much!
