Cold eggplant soup (Gajinaengguk: )

How are you doing in these hot summer days? How about making this cold eggplant soup side dish? Ingredients: 1 Korean eggplant (5 ounces: 140-150 grams, washed with the tops removed 1 tbs chopped onion 1 garlic clove, minced 1 tbs chopped green chili pepper 1 tbs chopped red chili pepper 1 stalk of green onion, chopped 2 ts salt 1 ts sugar ts hot pepper flakes ts soy sauce 1 tbs apple or white vinegar 1 cup of cold water 6-7 ice cubes 2 ts sesame seeds, ground Directions: Rinse an eggplant and remove the stem from the top. Cut it into 2 inch pieces (about 5 cm, then cut each piece in half lengthwise. Boil 1 cups of water into a steamer. When it starts boiling, add the eggplant and steam for 3 minutes. Remove the eggplant from the heat and let it cool down. Tear each piece of eggplant into bite size pieces with your fingers or cut with a knife. The desirable size of each piece is inch x 2 inches. Add it to a serving bowl that holds 2 to 3 cups of liquid. Combine with onion, garlic, green and red chili pepper, green onion, salt, sugar, hot pepper flakes, soy sauce, and vinegar. Add 1 cup of icy cold water and mix well with a spoon. Add some more ice cubes to make it more cold. Add crushed or ground sesame seeds on top and serve immediately with rice and a few more side dishes.

Dear Maanchi, thanks for your wonderful recipes which I've been using a lot. I have question: when you make Gaji namul you steam the eggplants for 15 minutes, for this Gajinaengguk you say 3 minutes, why is the cooking time so different if the result is so similar for these two dishes? I'm asking this because I'm afraid the eggplant in the Gaji namul may turn out too mushy and vice versa in the Gajinaengguk it might turn out a bit raw. and I've been looking for the perfect recipe for eggplants for a very long time. PS I also like your tofu recipes very much, actually the entire family does

I especially enjoy your recipes like this that are not found on the menu of most Korean restaurants here. I have green eggplants in my garden to try this recipe on though not as pretty as purple ones. Thank you Maangchi! 8-)

nothing against korean food. but i think the flavor ingredients seem to be the same for almost every dish! garlic, green onion, red chilli pepper/paste, soy/fish sause, sesame seeds lol

Maangchi, the korean red and green chili pepper you used in this video and some other recipes, are they as spicy as jalapeno pepper or less? Thank you

2 hot chili peppers + more hot pepper! that's way too spicy.

yes, check out my oinaengguk video. You can replace steamed eggplant with cucumber matchsticks. Good luck with your Korean cooking!
