Today I am cooking at home and making chicken empanadas and Mexican style green rice. This is a simple week night chicken empanada dinner. Empanadas ingredients 2 cups instant cornflour 1/2 tsp to 3/4 tsp salt 1 3/4 cup to 2 cups hot water 2 lbs bone-in chicken thighs 1 tsp seasoned salt 1/2 tsp lemon pepper 1/2 tsp smoked paprika 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 tsp ground cumin 2 Roma tomatoes 1 large jalapeno 4 scallions 1/4 tsp salt 1/4 tsp black pepper 1/4 tsp onion powder (optional) 1/4 tsp garlic powder (optional) 6 oz shredded cheese of your choice cooking oil for frying GREEN RICE Ingredients 1 poblano pepper (charred and cleaned) 5 oz baby spinach leaves 2 scallions 2 cloves of garlic 1 Tbsp chicken bouillon powder 2 cups of water 2 Tbsp cooking oil to toast the rice 1 cup long-grain rice (rinsed) 1/4 tsp onion powder 1/4 tsp garlic powder 1/4 tsp black pepper

We usually cook chicken with soybean sauce or pepper paste in Korea. I love to challenge the other recipe abroad like this! Cooking is love. Thank you!

Cant eat white rice gonna swap for brown or cauli rice. Luv yer recipes. Freaky tho cuz i just had an mmmpanada last night. Man it was on point
