I love melted/ grilled brie on my burgers with arugula because it's got a nice texture with the melted insides and the chewy fungus (yes you have to eat that too if you love brie. Lovely flavour to complement majority of beef cuts, as well as on steak! Goat cheese also works well with a bit of different textures like beets and walnuts, can't go wrong with that flavour and texture combination.

If you want the pull of a mozzarella but the flavor of a semi-firm cheese its ALL about the Smoked Scamorza. For me that is my go-to for burgers, and I've got to make my own decent burgers because here in Italy a good burger in a restaurant is quite rare and they're ALWAYS overcooked.

With as much as Barry references his high cholesterol, am I the only one becoming increasingly concerned over the amount of cheese, butter and red meat he's consuming? Love SORTED Crew and your recipes, but the show wouldn't be a show without all of you!

I don't know if a hallumi burger would work. I love hallumi and I love meat so I hope it would work. Would you recommend me to try and make it? Also may you tell me how to spell Hallumi I have got no idea. I am to be ashamed: (: ) is it Halloumi?

You can write Halloumi or hallumi, it doesn't matter. It wouldn't work in a burger but hallumi works perfectly in salads. I love fried hallumi in my salad (you make&fry it like a schnitzel)

I'm Indian and i don't understand how Paneer ended up in the cheese video. It is technically cottage cheese. Maybe they put it there to show contrast?
