My mum way of cooking chicken rice is so different she just toss in the chopped up chicken some basic vegetables very like carrots. And boil it down for hours. Although its simple but it is actually quite flavourful.
Edit: does he meant gelatinous texture?
One more thing there is actually no national dish for Singapore. There is a debate on which dishes should be the national dish of SG. From chilli crab, chicken rice, laksa thats all I think theres too many

I love the more recent novelty videos that you guys have put out, but in my opinion I still love your basic midweek recipes, that inspires us to just get into the kitchen and enjoy cooking. Dont go changing your uploading of challenges, battles and novelty trips, but for sure throw a few midweek meals into the upload schedule every now and then.

Ben > any chef I've seen on tv. More personable and charming and inforrmative and fun to watch, and partially because of the people he surrounds himself with. Could Gordon handle someone taking the mick the whole time he roasts a chicken? No. He'd have to do push-ups or something to even things out.

My father-in-law was a chef in Guang Dong before marrying & moving to NY. This is one of his specialty dishes along with lobster in black bean sauce. You did a great job Ben. My mother-in-law is a great cook too & I'm super blessed to have them both & to have learned these dishes from them.

Oh man I remember a time from elementary school. Ben came to Arizona for a week, and the whole time he was just trimming his toenails and his elbow nails. I asked why he had nails on his elbows and he said Because I nailed the audition. To this day I still have no idea what he meant.

Well, Ben and I go way back, don't we. I remember we used to fish for fishbones in the trashcans around London, being chased by strays, scratching up the legs of tourists for money. it was a simpler time, but we were happy then. Also, we were cats, apparently.

I remember Ben used to find ant nests and place some food nearby. Then he would watch for over an hour, not moving. Just staring as the ants slowly chiseled away at the food and took it back. Even as a kid, he was obsessed with feeding the masses.

As a Singaporean, seeing our favourite dish being prepared on Sorted just makes me misty-eyed! (and hungry. There's nothing like the smell of the rice cooked in chicken stock and chicken fat, and the silkiness of Hainanese style poached chicken!

I'm assuming this is nearly the same as khao man gai (chicken-fat rice) in Thailand. Love the dish! Thanks for all the details on chopping the chicken! It's always fun to see the same-but-different contrast of Eastern vs. Western techniques.

I taught Ben in High School. Nobody has true stories of Ben. He stayed in the teachers lounge during all meal breaks, cooking three course meals for the entire staff. The lunch ladies hated him as he kept telling them their breasts were dry.
