Pasteles And Lamb As Made By JJ And Kanchan Earlene Bonas-Johnson: This is a nice alternative to cornmeal. In Trinidad our Pasteles are made with cornmeal and our meat fillings usually have olives and capers as well as other local herbs. Wrapped in banana leaves and steamed. I'm going to try your plantain dough and see what I come up with. Thanks tasty.

I got really emotional watching this, especially when JJ was talking about his customization of the spice blend. I just thought about how while there would be all these people watching this video and thinking, No, no, no, that's not how it's done, JJ's kids, or even his grandkids and great-grandkids, would years from now be like, Well, that's how Dad/Gramps taught us how to do it, and it's amazing. I have no idea why that thought got me so much.

Pastels are found all over the Caribbean and Central & South America, all have their own twist and flavours that make them unique to that island/country. Definitely one of my favourite foods I usually use cornmeal / pan. have to try this plantain mix

Thanks for representing our culture with pasteles. Our mothers, grandmothers used a grater for the root vegetables it was hard work but fun because they'd talk and talk and those were happy times.
