I'm making this tonight. My main tweak will be to mix some dry rub into the cooked pulled pork instead of bbq sauce. The sauce on the bacon is enough. I'm also using shredded chihuahua cheese instead of mozzarella.

That looks delicious! Just one question, why the bacon? Will that stop the pineapple falling apart?
This is going on my Twisted recipe list to try as pulled pork is one of my favorite dishes.
