Instead of using an X-Acto blade you could get the Speedball Linoleum Cutting/Carving tools. Its about $9-12 for 6 different carving tool heads that fit into the main carving tool handle when not in use.
Using an X-Acto blade is really dangerous for carving. In art school I had done the same thing until I witnessed my friend (who was doing the same thing) get injured. Their hand slipped and the X-Acto blade pierced their thumb and blood went everywhere, they had to be rushed to ER. I didnt realize myself how dangerous using a blade was for carving until then.
My partner and I use the linoleum carving tools, sculpture carving tools and pumpkin carving tool set that we have whenever were carving things like you are with the potato or carving rubber.

I love making my own giftwrap & these are some awesome ideas! FYI, you can minimize the juicy stamp problem (cut a vegetable stamp & it's very wet/dilutes the paint) by cutting the stamps the day before & then letting them dry on a rack for several hours or overnight before stamping w/them.
