Shiitake mushrooms are my FAVORITE. The flavor is so rich and complex, but they're often extremely expensive at the grocery store. So I figured I'd grow some of my own and cook them up for you guys! Keep in mind this is a partial grow guide. to grow from scratch you'd need to create your own substrate and inoculate it with spores, let the spores develop shiitake mycelium, and THEN you'd get to this step in the process. But for the first shiitake video, I kept it simple and practical and went with a hardwood sawdust kit from Fungi Perfecti. SHIITAKE MUSHROOM RECIPE 70% olive oil 15% sesame oil 10% tamari or soy 5% white wine pinch of black pepper 1-2 cloves of crushed garlic Cut stems off, marinate in mixture, and bake uncovered at 350 for 30-40 minutes. Enjoy!

A character on Star Trek Discovery (a mycelium expert) was named after Paul Stamets! Kind of exciting to see the real world connection!
Im surprised at how expensive you said shiitake mushrooms were there. Here in Canada, I pay a lot less, although they are still one of the more expensive ones. Growing mushrooms looks fun, and I think Id like to try it when my kids are a bit older and can experience it with me.

I could easily listen to Paul talk about mycology all day long! This looks like a fun(gi) project that I'll have to try myself!
FYI: the fungi projects I've completed in the past have always yielded much larger mushrooms in the 2nd flush as compared to the first. They were of a different variety so I can't say for sure whether or not that holds true for Shiitake, too.

Using lemon juice, will break the chloramines chemical bond. Chlorine gas will escape one day but Chloramines remain in the water. Even through the distillation process. Ascorbic acid breaks the Chloramines chemical bond which is ammonia and chlorine. So you water still contains chlorine. and if you do this you will se your yield increase.

Interesting video. Thank you. Just starting out with my very keen interest in mushrooms. This is literally the first video I watched. Living in South Africa. Seems like Shiitake, Lions Mane & Maitake is the three strains Ill be giving my most attention to.
Any great sources of information would be greatly appreciated.

I have my own well. I can get water direct or post filters, post softener and post reverse osmosis. Is the goal just to have chlorine free water? I didn't get any strong feel for what the best water would be, other than de-chlorinated. The post reverse osmosis is like distilled and you did seem to be against that. Cheers.

plastic is not good for healthbetter not to use it to grow vegetable and make composebetter to use food safe glass to make compose and use clay pot to grow vegetableany plastic will leak some chemicals into the soil when it under the sun or put acid or alkali or salty in it or put something in it for long time

PSA: Cities are using more chloramine (or monochloramine) to disinfect water, and it CAN NOT BE BOILED OFF or off-gassed
I REPEAT CAN NOT BE BOILED OFF
It must either be chemically removed or not be used at all
So if you are going to soak your mycelium, use bottled water that has been boiled

There are a few tips worth trying
choose the best type - there are lots available.
grow them in the best environment - some eg oyster muchrooms like cool humid conditions and may be put outdoors
(I learned these and the reasons they work on gregs mushroom grower website )

It's interesting to see how confidently people teach others on mushroom growing, and it always includes some kind of info you've never heard of. This is a big problem in amateur mycology. We need more consistency and common knowledge.

You cant de-gass all types of chlorinated water. Some of the chlorine substances they put in do not evaporate. So if that's what you got, then leaving water out/ boilingit etc will give you more concentrated clorine.

those are some great looking shitakes you grew.
I have my first shitake kit ready to harvest soon, they are pretty big, but so very pale in color. Not sure if its just the species or they were lacking something

The chloramine in water wont volatilize like the chlorine. Some humic acid (or any organic acid) will bind it though. Just enough to change the water color is perfect. I collect rain water to do this.

Do the shiitake mushrooms you cut off (where some is left behind) grow back? As in does this block continuously grow mushrooms or is it only for a period of time and then you toss the block?
reply

Hi. I have Shitake mushroom mycelium, but I don't know how to create a shiitake mushroom patch like in the video. What does the base (that white block) consist of except the inoculated mycelium?
reply

this video reeks of paid promotion. For anybody lucky enough to read this comment before spending $130, you can buy a shiitake syringe and do it yourself for under $20
