I can feel the pain of those onions lol.
If your range hood vents to the outside, turn it on and prep your onions under it. Chilling your onions a day before use will cut down on the atomizing. The sharper the knife the better as well. Fully extending your arms while prepping is another helpful technique to better mitigate the effects of rank onions.

Jay, if you need a new recipe, try walleye ceviche. I base mine on Craig's Walleye Ceviche recipe, but keep it super simple with just the base ingredients. Always a hit. I especially like to make ceviche on a day when maybe I had to keep a couple small walleye that swallowed the hook or came from too deep. Keep up the great work!

I liked the vid.
I also make a chowder similar to yours but put in
clams and the broth it comes in. Quite good!

Great video, Jay, and great cooking clip! Looking forward to trying that recipe, although I'll likely make mine much thicker as I'm not a fan of thin broth. Also I'll be substituting pike as that's what I have on hand currently.

I cannot believe you went to all that work, putting together a delicious chowder AND DIDN'T OFFER EITHER KITTY MORE THAN A SNIFF. Sam, when slicing/dicing onions, try breathing through your mouth, not your nose. .
