you sir need a surveyor lol my whole family on dads side are or were surveyors so I know my way around the equipment. You need a transit to take measurements of the plot. The transit is leveled and then you shoot a tape measure with it and it tells you if you are dealing with a positive or negative grade and where to remove or add dirt. Its actually pretty simple with the older style transits which is what I grew up using, its more less a scope with crosshairs that you get level or true then use to read elevation. You could have that plot done in no time with a good surveyor. My family actually use to own 2 surveying companies, brooks surveys and peragon surveying co. I wish I was close to nebraska, id be more than happy to help you out.

Not sure if youll read this put I figured Id put my 2 cents in For myself who is in the concrete business, yes Id grade out the hump and save what dirt you have. Then usually if you are pouring a pad you dig down about 10 inches. 6 inches of stone and 4 inches of concrete or 11 inches for 6 inches of stone and 5 inches of concrete. But regardless youre on the right track and Im sure it will be fine Just remember, stone is a lot cheaper then concrete 4 inches of concrete is thick and will hold up to heavy equipment. That new shop would be greatl to store other cool toys and also build some fun vids, while having a place for all your trapping equipment so you can get it out of your garage. You could build an epic man cave too for cigar smoking, poker playing and altogether reveling. I could see some awesome Googan vids up at your place with this new enclosure. It wouldve been awesome if instead of lowering the ground you had a retaining wall built alongside your driveway, have that whole plot of land elevated higher than your driveway, fill in the low spots with fill, and have an elevated surface to build a nice garage on. Either way I think itll be awesome

So what I would do is to have part of the shop be 2 levels this way you could have a a small apartment for the googan squad to visit or anyone to stay. The apartment property be just simple wouldn't take up much room but would be on a 2nd level.

Any building even a dog house you want up above the surrounding level so you don't have snow melt or rain run off coming in the building. Also the concrete pad will settle 3-6 inches after a couple of years. So build up

The contractor your about to pay atleast 75k to put that building up would have had that properly graded in a day lol. And Im sure theyll do it anyway. You go feed the chickens leave construction to an expert.
