Robert I am from Brazil, and this rainbow fish get big, around 7 ft in average some about 10ft, they are very good to eat, but very dangerous for womens due the large amount of mercury (the silver color, to take of we should brush with a hard brush in running water till get out the shine. it is banned for commercial sale in Brazil.

Rob! My grandma used to make these guys all the time, we call them belt fish! You can dust the carcass with some seasoning and flour and fry those babies up till the bones are nice and crunchy - It's like those oceanic potato chips you love to eat off those fried fins on STEROIDS! SO GOOD! try it out next time!

Proper way to process that fish is just to steak it, then grill or fry. never fillet. let alone skin it. one of the best parts of that fish is the skin. you just missed half of the best flavors that fish has to offer.

Hey Rob, in Puerto Rico we call it machete and we cut it in chunks about 2 inches and fried, super crispy and amazing flavor. Enjoy my brother! By the way we caught with cast net in about 6 to 10 feet of water.

Next time Rob fold the ends in they will look like a mini spring roll or cigar. Try adding a quality cheese to it. Even brie or Camembert lovely and creamy it would melt into the fish.
