Regarding Win10, here are a few tips: (apologies for the long post in advance)
1) Use Win10 on a separate computer, separate hard drive, or in a virtual machine. If you only need Win10 for games, then either use a separate PC dedicated to gaming-only or boot Win10 from an external USB SSD. If you need to use MS Office or any Windows version of certain programs, use a virtual machine with internet permissions disabled.
2) Limit Win10 to only what you need it for and use Linux for everything else. You can browse the internet just as easily in Linux as you can in Win10 and many programs, not all, offer Linux versions of the exact same program rather than using -alternative software-.
3) If you don't need to go online, keep Win10 disabled from connecting to the internet. Unless you need to look something up, you don't need the internet. For example, MS Office works offline just fine.

I usually disable all unnecessary permitions in apps except for the diagnostics and analytics because I thought disabling them could negatively affect the app or system's performance. Am I wrong? Or are the negative effects too small or non-existent when compared to the privacy risk of enabling the permission?

Although you should know the administrator's password, you should not login to your PC with administrator privileges.
Your day-to-day account should be a limited user. In the event you need administrator access, that should be under a different login, which you can use as needed.

If your looking to get away from windows 10 you can use Linux, most are FOSS so you don't have to spend a bunch of money on a new computer. You just need to do some research how to use it and which interface vibes best with you. Which will also help you with a clean slate too.

If my kids ask why I'm sending smutty pics to their mom then I'm sitting them down and explaining where kids come from, and that mom is a thirsty lady.

Hey there-s a website called BugMeNot which you may or may not have heard of. It used to be completely safe but now hackers are using it to share login credentials. Many accounts were hacked during the discord leak which were used on BugMeNot.

I use Windows 8 on the desktop I primarily use for gaming and schoolwork. while I hate it, it's still way better than windows 10. Linux on all my other machines though.

Prob is, so many apps don't work if you deny them permission. For instance, Google Calendar even denies me access if I remove permission for it to mine my data,

Also, suggest viewer 'Bouncer' app to manage permission. You also give it a try.
