If you're looking for a quick and tasty way to eat breakfast on the go or pack along for your back to school lunch, this is it! High in protein and low in calorie, here are my Fiesta Muffins! RECIPE BELOW: Ingredients: 4 slices low sodium turkey 2 eggs plus 2 egg whites 14 cup black beans, rinsed and drained 1 tablespoon hot sauce 14 cup chopped bell peppers 12 green onion, chopped Salt and pepper TOTAL PER SERVING (2 muffins): $1. 04 Directions: Preheat oven to 375 degrees. Spray four large muffin tins with cooking spray and place 1 slice of turkey in each. Whisk together the eggs and whites. Add in the beans, hot sauce, bell peppers and green onion. Pour the mixture into each cup. Bake for 20 minutes, or until set. CALORIES per serving: 186 Protein: 26 g Net Carbs: 5 g Fat: 6 g Fiber: 2 g If you make this, please hashtag your recipes

I am soooo glad that you are considering accessibility in your upcoming Cheap Clean Eats video's! I love to cook and eat clean, but sometimes the ingredients are just too out of my way to find and purchase. (I am an impatient 19 year old college student) But stuff like this, I can easily find and WILL make. Cassey, you're the bomb! Love ya.

So glad to see cheap clean eats is back! Cassey, I've been hearing a lot about counting macros lately, I'm so confused on this, can you please do a video on macros and how much carbs/fats/protein one should consume (for muscle building, for leaning out, etc) Please! Thank you!

Question: can i also use something else instead of turkey? I actually only like chicken!

These look great! I do have a question - how do they store? As in, would it be possible for me to make a batch and pop the 2nd half into the fridge for a day, then reheat? I ask because no one else in my house will be keen on them.

I don't want to be mean or anything but fiesta is not equal to frijoles! (Beans) so. It is not a mexican breakfast as she intended to be anyway it seems yummi and I do want to try it

Just made a batch of these and they are amazing! Plus the recipe yielded a great amount so I can freeze some and eat it later for a quick clean meal. A+!
