Sohla Makes Garum, the Ketchup of Ancient Rome (with Max Miller) - Ancient Recipes With Sohla wave: I think the so called 10th century fast garum would not be considered garum at all. It's a fish broth or soup. There's no fermentation involved. People using this would surely think garum is disgusting and it would quickly fall out of fashion.
Far east asian fish sauce are made from anchovies and salt only for a reason. There are other asian fish sauce made from a variety of fishes but you cannot get the clear liquid that you would get from anchovies. The Romans probably used all sorts of fish thrown together so yea that's why it seem putrid. i. e. they were doing it wrong.

I so wanted this and somehow missed it. Sohla and Max with my other fave YT people. Just now get with Jon Townsend and Natalie and Tara Try Stuff. I can't believe I missed this when it came out. But happy Thanksgiving to people who celebrate it, and have a wonderful life to everyone. Oh, and Natalie and Tara already did a video with Jon.

I came because of Max, I left, because this show is nowhere near as good as Max's. And my issue is mostly with the editing and script. How many times do you need to repeat the same thing? Hint: You do not repeat anything if you take your viewer seriously. Besides after watching this, I learned nothing interesting. So much for -History-.

Sohla: I'm an amateur fisherman and those fishies look not at all like the mackerel that I catch in the Atlantic and Pacific. I love that you and Max did a pre-operative head to head. I'd like more shows like this! But I'd really like it if you and your guest disagree passionately.

I wonder how much glutamates play into the flavor of Garum? So many funky ferments like cheeses and meats seem to increase or intensify glutamates. Food science is fascinating and often too nuanced and complex for me to fully understand, but I enjoy the flavor journey!

Now I'm super curious about the history of bagoong (fermented fish paste. It's used in different places in Southeast Asia but I wonder if the Spanish brought garum to the Philippines and we developed and spread it from there or if it has a different origin story.

I love the herbalicous recipes the best. I feel like most people think ancient recipes were just meat, barley, and water. There are so many wild herbs that have been in the human diet from the very beginning. What is the oldest slaw or pesto you've ever made?

Since you compared the garum to asian fish sauce why try the recipe with something like Thai fish sauce. It might be good, while costing less than the ltalian sauce, and being less arduous than the make-your-own. Thank you for demonstrating the garum.

Isn-t it strange how some of the most smelly things can be delicious? I have some Asian Fish Sauce and it smells horrendous, but the tastes it unlocks in meats is unbelievable. I don-t blame the Romans for being so obsessed with it.

I'd be careful with that recipe. This is MSG which is why they placed it on everything. I would hazard a guess that it has the same negative aspects of the modern version of MSG that everyone claimed to not like in the 80s and 90s

If it's fish left to sit in salt I mean that's the exact same way fish sauce is made in Vietnam so I mean you could buy a bottle of fish sauce and save yourself the time.

Why not use grape leaf's instead of bananas. I'm sure they would of had them. Considering the huge amounts of wine they consumed.

I love having a mash of my favorite cooks and historians. Sohla and Max are both excellent and everyone should follow them both
