I remember my classmate in culinary school (culinary I) ambitiously made beef wellington for an exam. He had trouble figuring out if the meat is cooked plus he made a mistake of opening the oven three times to check. The pastry outside was brown but when he sliced it open there was a loud thud as he smashed his hand. he was disappointesd and pissed that his meat was entirely still raw. Our chef instructor was forgiving.

There's a Peruvian dish called pachamanca which is prepared in a hole in the ground similar to a campfire. The meat is introduced and the sides of the hole are surrounded with rocks, if the rocks are not good enough they can explode due to the heat and hurt people

Watching kids on cooking shows do some fantastic things amazes me. They have fun at it and I don't. I remember when I use to want to and everyone else around me acted as if it was a horrible chore. That feeling for cooking stuck.

I made a beef wellington for Christmas. Turned out great. Just take your time and follow the instructions and you will be just fine. The only difficulty is just how expensive the meat was.

Souffles are not that hard. All you have to do is don't overbeat the egg whites and gently fold them in the batter. Oh, and make sure an earthquake isn't going to happen during baking.
