In Friends there are many things which don't make sense about Phoebe's background. She was the most neglected character out of the main 6.
1. Why did her mother kill herself?
2. Why did her father abandon his family?
3. How did her stepfather (which we never saw) end up in prison?
4. Why are she & Ursula estranged (probably because Ursula is a sociopath, but something must have happened between them?
5. Why did Phoebe have to live in the streets? Where was her grandmother (or other relatives) when she was growing up?
6. How did Phoebe escape from living in the streets? How did she end up as Monica's roommate?
Of course there are unanswered questions about the other 5 characters as well, but we got enough insight into their families & upbringing throughout the show (especially Ross & Monica.

Earl's list is resolved! Raising Hope first episode, after the story about Hope's mom being a serial killer, they have a story talking about Earl. The headline was something like, local neerdowell finishes a list of good things, and you won't believe what happened. The creator also made a reddit post explaining how it ended. Earl is indeed Dodge's dad, while they were going to have Earl Jr's dad as some celebrity, but the show got canceled before they could figure that out.

I never cared who Nicole's real father was. I don't even remember that paternity test episode. Not anything against Ms Mojo, but as a Family Matters fan I am SO SICK of the What Happened To Judy? Question. Not so much the question itself that is reasonable. It is how obnoxious Jamie Foxworth is about it. Her parents were pains in the As and the producers got sick of them, so they fired her. Too bad for her but what is she now 34 35? Get Over It.

About Moesha, I heard that it was supposed to be revealed that Moesha was pregnant during an episode of Moesha's spin-off series The Parkers, but the writers decided not to go with that plot.
Also, we were supposed find out in the 7th season that Miles was supposedly kidnapped by one of Dorion's rivals (who was also gonna be played by Ray J) which was gonna be weird. But yeah I wished Moesha would of aired for at least one more season.

On Friends, it was not just Phoebe's family but also her sister Ursula. Where did she go? Why was she not at her twin sister's wedding? We know they had a strained relationship but they still were twins after all. Seems strange they just left that whole relationship hanging, especially seeing how they made a point of them being twins but different!

The final episode of Soap ended with no fewer than four characters in imminent danger of being killed. It was a great show, but its five-season arc was cut by one because ultrareligious groups who didn't watch it demanded the show be cancelled.
As for Judy, I think that one of Urkel's mad science experiments erased her from the timeline.

Ernie. Lots of things happened in the family through the years (marriages, births, etc) but he was never mentioned.
