Chinese dragons usually can take a human form, but considering Mushu's size and rank, I don't think he's a typical dragon.
In a 1903 version of Mulan, she actually has a cousin named Mu Shu, but he's too scared to go to war. She uses the name Hua Mu Shu when she joins the army.
Hmm, well when she knocked Shanyu over on the roof she had his sword so she could have killed him in that position if she was fast and strong enough. She also would have had to reach her match before she set off the avalanche in time, and found a way to escape during the bath (which is all possible, but harder. Mushu still might have been able to disguise himself when he forged the letter.
Khan would be more difficult to transform. Would Mulan have another horse? If not, Shang's horse would be their only hope in the avalanche scene, and he seems to disappear somewhere until seen in the parade.
