The secret to perfect macarons is to stop trying to make them perfect Recipe, makes 10 large macarons 2 egg whites 1/2 cup (100g) granulated sugar 3/4 cup (70g) almond flour 3/4 cup (90g) powdered sugar 1/4 cup (30g) cocoa powder salt cream and chocolate for the ganache (very small quantities) Beat the egg whites until fluffy, then beat in the granulated sugar until the mixture is glossy and you get floppy peaks. Put in the almond flour, powdered sugar, cocoa powder, and a few grains of salt. Fold the dry ingredients into the eggs until you get a mousse-like consistency. Cover a sheet pan with parchment paper and spoon the batter on in about 20 dollops. Let them sit and dry for a half hour. Heat the oven to 350 F / 180 C and bake until the meringues start to crack, about 15 minutes. Cool completely before filling. To make the ganache, combine as little as 2 tbsp of cream with an equal quantity of chocolate by volume. Microwave until just bubbling, let it sit for a minute, then stir until smooth. Cool the ganache down to get it to a spreadable consistency

I've made 'perfect' macarons many times and tbh they're not all that. They're kind of a bragging right among bakers but unless you're trying to show off your chops as a domestic goddess they're a timesink with relatively little payoff. They taste good, yeah, but not only are your 'imperfect' ones are adorably charming they probably taste way better too. Protip if you live in the US: Almond flower is pretty expensive in most stores, but I found that you can get the same-size bag at Aldi for around half the price.

I would pay an amount of actual money that exists for an app that had Adams voice and was just a big red NO button (useful for any time in life you need to say it to someone with the authority you can only attain by being a really great internet cook. If someone could put this together before my dentist appointment next week, thatd be peachy.

This has. honestly completely changed my perspective in a way I never expected. Macarons are my favourite and I've always wanted to make them at home cause they're so pricey but I was scared they'd be ugly. But yeah, who cares? If they taste like macarons, I'm gonna be really happy I'm making these tomorrow, will update how it goes.

Hey Adam, Some of us arent in luck, such as me, and there is literally no almond flower in any of the stores around me in a fairly large area. Also almonds are way way way cheaper (usually less than halve the price) than the flower (which i found on amazon. Do you have any tips on making the flower at home? Great video by the way

I absolutely love your videos. They have become a staple in my house. The home cook attitude of NO you don't have to go over board, this isn't for a 5 star hotel. If it tastes good to you then it's perfect. Plus the alternative Adam is my favorite. Long live the empire

How to make macarons. 1. try and make perfect macarons, 2. mess up, 3. denial, 4. guilt, 5. anger, 6. bargaining, 7. depression, 8. acceptance, 9. make another batch knowing they are gonna look like garbage and be ok with that because they taste the same.

Actually, speaking of factory perfection: i can buy perfectly shaped (and quite yummy too) macarons at a supermarket for a rather low low price compared to bakeries, that charge 2 for one macaron. Instead, I can have like 4 or 6 for that price.

I appreciate what you're going for in the video, but this is tough to watch. The first video I found of yours was the Broiled Chocolate Chip one and I enjoyed it so much because it was to the point, not even the reason of it being concise.
