This week, we're faced with a very particular challenge, the likes of which I never thought I'd have to face: batter-fried chicken. It sounds innocuous enough, but a cursory glimpse at any given recipe eschews batter in favor of a sturdier, more reliable flour-and-egg dredge. Thanks to our new kitchen producer (Kendall Beach, we concocted a formula for batter that wouldn't bulk up, wouldn't brown too quickly, and wouldn't crack in the unforgiving oil. The results are annoyingly difficult but undeniably fantastic fried chicken, made in (what I imagine is) the Pollos Hermanos style!

As much as I want to like this recipe, I'm having a little cognitive dissonance about it. It just feels, I dunno, unlikely to me that any fast food restaurant governed by the F. D. A would have Vodka in it's ingredients list, but to be fair this isn't really based in any sort of actual knowledge about F. D. A standards for fast food restaurants so I'd love to be proven wrong about it. I guess I just think that this recipe should be for the more gussied up version, and using one of the lesser concoctions for the main.

Hey Babish, just wondering. Do you have a electric frying pan in America? We have a frying pan here in the Netherlands, which is electric, can be set to a temperature and has a safety system for overheating or for beeing on too long. You know, just like the kind in a fast food place but smaller for home use. I always see cooking vids in a pan with oil in it, which looks dangerous to me.

One major way to reduce the danger of deep frying at home is to not use latex gloves for dropping your food into the oil. If that oil is hot enough to melt your glove, the now liquid rubber will melt into your skin, creating just gorgeous 3rd degree burns.

Glad to see I'm not the only one who goes cheap on spice grinders.
Also, deep frying at home scared the hell out of me too. Some of those injuries you just don't forget.

So you re telling me that all this time I believed they gave me a surprise extra regular fry in my curly fries it was only the middle part? Disappointed realization.

I agree that deep frying on the stove is terrifying. Is why I try not to do it whenever I can get away with it. Deep fryers all the way, or just bake instead.

Bab's skip the cast iron go deep fry in a wok. The high sides make it way less scary and you have a ramp to slide in delicate things.
