At Alfie's in Washington, D. C. 's Georgetown neighborhood, chefs Justin Ahn and Alex McCoy are serving up some of the city's best Northern Thai cuisine. Using locally sourced ingredients from the mid-Atlantic region and their own farm, Alfie's puts bold flavors and spice at the forefront of every dish. From som tam salad to the gaeng hang leh, each dish is meticulously crafted using labor-intensive techniques. One of the restaurant's surprise hits is its Thai steak frites: a massive 26-ounce rib-eye covered in a rich massaman curry peppercorn sauce. But you'll have to get there early; Alfie's serves just five of these steaks each night. #thai #steak #washingtondc 00: 00 Intro 01: 10 Prepping Produce 02: 36 Seafood Breakdown 04: 22 Rib-Eye Butchery 06: 18 Alfie's Construction Delays 06: 59 Som Tam Salad Prep 07: 55 Gaeng Hang Leh 10: 16 Making Sticky Rice 11: 06 Pre-Shift Meeting 12: 21 Service Starts: Cooking Steak 13: 40 Final Dish Plate-Ups Credits: Producer/Director: Connor Reid Camera: Murilo Ferreira, Gregg De Domenico Production Sound Mixer: Benjamin Sands Editor: Beatriz Calleja Assistant Editor: Seyeon Bang Executive Producer: Stephen Pelletteri Head of Production: Stefania Orrù Supervising Producer: Connor Reid Post-Production Supervisor: Lucy Morales Carlisle Director of Production: Michelle Fox Senior Director of Photography: Murilo Ferreira Supervising Producer, Social Video: Jordan Shalhoub Download the Eater App: Eater is the go-to resource for food and restaurant obsessives with hundreds of episodes and new series, featuring exclusive access to dining around the world, rich culture, immersive experiences, and authoritative experts. If anyone one of these negative comments would open up their own business let alone their own restaurant, you wouldn’t last a day.
It’s obvious they are both chefs and passionate about food. Also obvious they did things themself to cut costs. It’s also evident they are popular due to the success in their pop ups.
Get a fricking grip talking about finance bros, business ad, paid ad holy crap man
Just be decent, and not a crappy humans. Some people’s children man

having lived in Thailand for many years, I can tell you they are not even close on the ethos of locality as being most central to Thai cooking and culture. Was the ethos demonstrated when the chefs put a server bounty pushing expensive bottles of Pinot Noir to pair with their ribeye special. for an Isaan restaurant! LOLOLOL
This video profile is ludicrous and pretentious to Thai cuisine and represents what is wrong with the restaurant industry today

I hate watched this entire thing. I don't know how to put my finger on it but the amount of pretentious bro-chef in this is crazy, plus the eater feature so early, plus the capital one sponsorship.
Plus the pre-seared steak going in to the pan at 12: 24, let's go take 2!
Anyways, you know when something tries to go super-authentic and just jumps across the end of the horse shoe in to just pretentious

5: 40 My heart dropped when I watched him chop through the bone joints. That is incredibly discouraged, as j-knives tend to be thin behind the edge and are prone to chipping/cracking. And then the torqueing of the blade one second later! Genuinely surprised the blade hasn't given up yet!
Also: $50 to the server who sells a $35 bottle for $105, or a $57 bottle for $150!

This episode has a weird collision between how they are phrasing things sounding as if this is their every day grind and the fact that this is day 2 open. i get that soft opens exist but even if they had only been going at this for a month i dont quite know if i care all that much about how they are able to stay in business, id hope they are able to make it 2 days lol.

for the fish, perfection, perfection when it looks like he cut it with a bread knife and scaled it with a rock. To the sous chef's defense, neither him nor the other cooks need these two head chefs. they're actually better off leaving and starting their own thing, these tools would be a nightmare
reply

Lmao. One thing they were occupied with was whether to reword the menu Sounds like they're trying to hustle White people into thinking they're eating something so exotic for them to go brag to their friends about. Like Rose's Luxury and their mentaiko pasta. Lol. Smh.

Background in sushi chef, but the fish is all dirty and bloody before butterflying. You ask all the real sushi chef, what do you do before fillet CLEAN THE DAMN FISH FIRST! Eater must be desperate for content. These guys are not real CHEF!

People in the comments acting like he's butching down ribeye bones with a japanese knife. he literally says take a cleaver to this bone and then in the next shot there is a cleaver on the cutting board. Clearly just isn't shown.
reply

Eater, you always know exactly what I need. I'm surprised this place has never caught the attention of my nose. I've literally walked by that alley on my way to the waterfront park. Now I'll walk a little slower and maje a stop.

This video is everything wrong with modern food criticism it’s just an ad for the place with zero substance just finance guys basically pitching a nothing restaurant with tired cliches to build hype for bots
reply

Everyone there has absolution passion in the craft, amazing! The food looks incredible and their attention to detail is what makes a fantastic boutique dinning experience. I can’t wait to check it out.

This is a pretentious french arthouse movie reimagined as a restaurant. The way they pretend to be nonchalant but remind you constantly how they're nonchalant makes it beyond unbearable.
reply

It's a lifestyle. If I didn't own a restaurant I'd still be cooking. Yeah, that's what most people do for dinner, that don't own a restaurant. These dudes full of themsleves lol.

it’s very 2015 to think music is a little too loud is a selling point. i was hoping that trend of expensive millennial sharing plate restaurants blaring loud music was dead.
reply

D. C. restaurant, California attitude, NYC inspiration of in love with their own BS that they are so cool because they fail to plan ahead and don't have regular purveyors
reply

Chopping through bone with a Japanese knife - are you insane Use a cleaver or start it with a saw. Shows no understanding to basic butchery or respecting knives
reply

1: 40 not all great Thai food chefs must be Thai. But 2 white dudes (1/2 white or whatever) running a Thai restaurant open for only 2 days & naming it Alfies is wild
reply

They changed the title from hottest Thai restaurant cuz they only been open 2 days lmao. What a joke. DC restaurants just profitting off ignorant rich people
reply

Two years- quite the commitment. I wonder who financed the project. I hope they continue to grow. Thai isn't my favorite, but I love how fresh their food looks.
