My gf just finished a 6 day thai chili fermented hot sauce yesterday. Next time we'll blister the chilis and add some onion. We added raw garlic at the end.

and I love you, please keep fermenting! Vacuum sealer (bulk bags) are way cheaper than zip type bags, and better at keeping burn at bay. Keep up the awesome Brad!

Hot take? Leave any salsa in the fridge long enough and it becomes fermented salsa.

Brad reminds me of a young version of my dad. Except my dad can t cook anything, but well done everything on the grill.
