One for all our fellow coffee lovers out there. And if you're not a fan of coffee then Sally is pretty convinced she can change your mind with these delicious Caramel Latte Cupcakes. The sweetness of the caramel balances out the bitterness of the coffee to create the smoothest of flavours. But we do get it. not EVERYONE likes coffee so feel free to leave it out for a straight up caramel cupcake (or make it salted caramel! Caramel Masterclass: 230g Caster Sugar 125ml Water 250ml Double Cream 1/2 tsp Vanilla Extract For 12 Cupcakes Preheat Oven to 165C (fan) 185C (no fan) 125g Caster Sugar 125g Self Raising Flour 1/4 tsp Bicarbonate of Soda 125g Softened Unsalted Butter 2 Eggs 1. 5 tbsp Espresso (cold) For the Buttercream 250g Softened Unsalted Butter 400g Icing Sugar 2-3 tbsp Espresso (cold)

I bet these taste amazing. I'm not a massive fan of coffee in cakes (even though I love drinking it) but when I first made your Mississippi Mudslide cakes I put too much coffee in by mistake and I'm so glad I did! With the caramel in the centre and in the buttercream, the two flavours were divine together. I bet it's even better in a vanilla cake rather than in a chocolate one

Sally my cupcakes don t ever seem to come out as big as yours: ( at first I thought my butter was too soft but they just always seem to sink a little, dont keep the nice rounded top, and always pull in a bit from the cupcake tin I don t know what I m doing wrong! I also watched the cupcake masterclass!

Friendly reminder that organic is a marketing ploy that provides no nutritional benefits, is worse for the environment and still uses pesticides, and in animal raising results in the death of the animal if it gets sick instead of providing simple medicine. It's extremely privileged and short sighted.

Transforming drinks into cupcakes is the classic crumbs style of making cakes! N im totally in love with it! So quick prep and delicious as always! they literally feel like drinking a glass of that drink. also sally you were working on a swirly cheesecake right? Any updates on that? love x

I love coffee, but I hate coffee flavoured things. So no coffee cake, coffee cheesecake, iced coffee. But I drink 3 or 4 cups of coffee every morning and thoroughly enjoy them. I m just weird.
