I expect some might push back and complain about the cooking sounds on this one, but I appreciate how real audible your kitchen is. Feels like I'm there with you giving sensory cues. Sometimes folks mute those when editing videos, but for me, I find them useful. Like, what should I be hearing/listening for regarding speed of blender/sizzle in the pan and such. (Especially dislike background/wallpaper musak muffling the creator. like, let me hear the cook)
Note well, I understand people with legit sensory sensitivity/overload (I have those days myself) but folks who just gripe for beefing sake can adjust their volume.

Was lazy the other day, used frozen burritos from Sam's club. Greased a casserole dish, added a little canned enchilada sauce on bottom, the frozen burritos, more sauce on top of burritos, backed in 350 degree oven till burritos was done added graded mozzarella cheese top back in oven to melt cheese. I topped mine with onion, sour cream and black olives. Loved your homemade ones, I'll try them soon. Thanks Nashville Tn

We loved these back in the day. Making this for sure. It will be easy to swap out the beef and use a veg substitute and minimal oil-much appreciated. Thank your son for the inspiration-he has very good taste. I have leftover beans and rice so I may do that, too. Lots of delicious options.
Oh, and I found the rice strainer/washing bowl you use and it's my absolute favorite tool. I use it daily and love it so much.

I just had one this week because I remember eating them as a teen in the early 1980's, lol. The one I had it was like an enchilda and open on both sides, not like a burrito. The torrilla was too thick to easily cut through with the plastic utensil they gave me. Yours looks much better! I prefer green enchilada sauce, so that will be how I make it. Glad you mentioned the tortillas from Costco.

I actually have all of the ingredients in my kitchen, right now that never happens! I even already have homemade refried beans already made (good thing I didn’t use them for a breakfast taco earlier lol. It’s a sign. Gonna pull some ground beef out of the freezer for enchiritos tomorrow! Thanks for the video. PS bonus: now I know how to make enchilada sauce which I never did!

Hello. My Girls and I ate many of Taco Bells Enchirito back in the Late 70's, 80's and 90's. Their food was good back then but something changed after 2000. We now make Our Own Taco Bell items at home and Ours is so much better than Taco Bell of today. Haven't ate there but a handful of times since 2000 and have regretted it each time. Just not the same anymore. Thanks for Sharing.

Taco Casa makes them today and have for years and they're much better than Tai Bell plus they still come with black olives on them, all of Taco Casa's food is much better tasting and better quality food than Taco Bell's food, you're about the 3rd person in the last month I've told that Taco Casa still makes them, some people think that you can't even buy them anymore lol.

Yes! I can't wait to make this recipe! I've been making my own chalupas since Christmas, when Mission Tortillas came out with the chalupa shells. I make the taco meat, assemble all my favorite toppings, and then lightly fry the chalupa shells.
Taco Bell chalupas and enchiritos are my two favorite items, and now I can make both of them! Thank you for sharing your recipe!

Oh that enchirito! During my pregnancies in the early eighties, semi-bed rest with toxemia and non-stop nausea, my little brother drove his little red Camaro to my house with a bag of these. It was the only solid food I kept down. Oddly enough, each of our boys loved Taco Bell from babyhood! Brings back so many memories and I am going to try this! Thank you!

I pay people to make things for me. You might have a way that is cheaper than doing it yourself, better, but it will definitely use more of my limited time alive on Earth. I bought an enchirito at Taco Bell and feel robbed. It looked nothing like the picture and I know I can make one half sleep in my own kitchen. Yours looks amazing. My son rather eat my cooking as well. Everytime we go out to eat. I have to hear how my food is better. Thank you for making this video.

My mom talked about the Encherito and the Bell Beefer. I'll definitely revist to make for my 70 year old mom. Was one of her favorites she ate almost daily in the 80s pregnant with my twin and me while she was working in the factory in Bellflower for plastic bottles. Mostly Johnson n Johnson bottles.

We stopped going to taco bell when they installed the kiosk and told us to order from there. No physical menu on the wall. Never went back. Discovered a Mexican place down the road that makes the best salsa and quesadillas. Shrimp or chicken. They are wonderful. I wish I could do those at home!

I was a Taco Bell fan when I graduated from high school in 1970. I remember the Enchirito with the little sliced olives; however, I don’t believe I ever ate one. This one looks good. What really looks outstanding is the sauce you’ve created. I look forward to trying it. T. Y.

In 1981, I was pregnant with my first child and I ate Taco Bell Enchiritos almost every day. Good to know there is a recipe for d. i. y. Now that I read more comments, I wasn't the only pregnant woman that craved enchiritos. I'm glad to know I wasn't alone.

Yours is too gourmet and looks delicious. For a fast food flavor I use Old El Paso canned red enchilida sauce and packaged envelope taco seasoning. Don't hate on me. I also top it with much more than 3 sliced olives with a heavy pinch of sliced green onyoun.

I was so excited about the enchirito coming back. I got one the other day and it was so disappointing. Half the size of a bean burrito, meh sauce, barely any cheese, and yes, zero olives. What a bummer.

Did you mean to say cumin seeds because you said ground cumin but had the seeds in you container with the salt and cracked black pepper.
Also don't you strain your sauce I was taught to strain it.

I remember the 1970s Enchirito with the line of sliced olives on top, served in a longer foil tray. That was back when Taco Bell still had mission style restaurant architecture. They were simply rolled, with open ends. It was my favorite item.
