Aaah, Summer. It feels like it is finally here. Here is London, it's never quite an 'Indian Summer'. If we're lucky we'll get a few days above 25C which is often considered a heatwave LOL. So, in an effort to try and stretch out this good feeling and bring a little exotic flavour to our days, I thought I'd share my recipe for Chai Latte Cupcakes with you. They are really delicious RECIPE - 150ml whole milk 2 heaped tbsp loose Chai black tea 125g unsalted butter, soft 125g caster sugar 125g self raising flour 2 large free-range eggs 1/4 tsp bicarbonate of soda 1/4 tsp cinnamon 1/4 tsp ground cloves 1/4 tsp ground cardamom 1. 5 tbsp chai milk infusion 200g unsalted butter soft 450g icing sugar, sifted 3-4 tbsp chai milk infusion

Hi Jemma I really love your videos and recipes, can you help me please? I tried several time your buttercream, I always mix the butter a lot, and I also sift the sugar, but unfortunately I always feel the tiny sugar crystals in the buttercream. What do I do wrong? Please help me: ) (sorry if my english is not correct) Greetings from Hungary

I got your book back in 2014 for christmas - and it has not failed me once I LOOOOVE the chai flavour as much as the lemon and poppyseed in summer, and it's earned a top spot in my recipe books, with icing sugar and flour splatters for proof I wish for one day to work in a a bakery so I hope I can come down south to C+D in the future: )

Okay, we get it: 'chai' is the word for 'tea' in a lot of languages that aren't English. The title of 'chai tea' is used to refer to a specific type/flavour of tea the way 'fruit' or 'pasta' might be added to describe the kind of salad you're eating. You can all calm down now.

Hey Jemma I absolutely love your videos and was planning on investing in a stand mixer myself. I know you've done a video about kitchen essentials but I was wondering if there was a particular brand and model you'd recommend? Thanks

This was beautiful Jemma I made them yesterday as little loaves rather than cupackes. I also added some nutmeg and ground ginger and it was awesome: ) Thanks for the recipe If I lived in London I'd be a regular at crumbs and doilies

I made these and they are delicious and this is coming from a real indian who loves indian tea flavours also got a lot of compliments on them. Putting raisins in the batter makes them even better by the way

So many comments about how chai translates to tea. Can we all agree that the type of tea that chai is (with all its spices, is different to the plain black tea (e. g. Ceylon) most are familiar with?
