I've got a sort of poorly informed question. In the states you can buy block margarine, which is of the same consistency as butter, and could be used in a one to one swap (my mother always baked with marg. I've never used non-butter for buttercream, nor do I buy marg except in the spready pot, which is mostly water anyway. So, I take it that you are using the spready pot plus Trex or Stork? When I think about it, I've only ever seen stork as block margerine, and it isn't that nice on toast; (

I'm pretty sure that, at least in the US, you have to be sure to get high ratio vegetable shortening which I haven't found on the shelf, only online. Major brands such as Crisco switched to a transfat-free formula years ago so now their melting point is basically the same as margarine and you might as well use all margarine if you can't get a hold of the high ratio shortening.

Thank you so much for this tutorial I have accepted the challenge of making a gluten free, dairy free, soy free cake for a friend and I've been wondering about the soft sunflower margarine. Brilliant mixing it with vegetable shortening. Do you happen to know if I can use this as a butter substitute for Swiss Meringue Buttercream?

Does anyone know of an unsalted vegan butter? I'm trying to avoid shortening, but whenever I use only vegan butter, it's just too salty. I've searched for a long time and have never seen an unsalted vegan butter. Why is that? Does an unsalted version even exist or would that basically be vegetable shortening and I should just use that? lol

Extra pro tip (from someone who has been experimenting with vegan baking for 5 years): add a teaspoon of butter flavour extract You can find it in your baking store, and most (like Wilton's) are vegan and it gives your butter cream a wonderful buttery flavour that sometimes is missing because of the shortening: D

Thanks for doing this, Jemma Looks like a great recipe and glad it's not too sweet as a lot of vegan buttercreams are Thanks also for getting on board with #veganuary, every little helps so hopefully this will encourage people to give it a go and not feel like they're missing out on anything. :)

So glad you posted this I work with a vegan bakery and have been wanting to do a buttercream I would like to point out (as they did with me) that sugar, even powdered, isn't vegan You have to look for it. Sugar is made whiter by filtering it with the charred bones of animals Blew my mind

Which vegetable shortening do you use pls? .my two granddaughters have milk allergies so I'm always experimenting with dairy free options. I have the added prob of living in a hot country (Cyprus) which when it comes to Birthday cakes can be a nightmare
