You know how to make Rocky Road now (see my previous video) so let's take things up a few notches and cupcakify Rocky Road Recipe. For the BPB 90g salty pretzels, whizzed 25g melted butter 2 tbsp Golden Syrup (or corn syrup or honey) For the sponge 120g buttermilk 120ml cold coffee 110ml vegetable oil 1 lg egg 140g plain flour 185g caster sugar 35g cocoa powder 1/2 tsp bicarbonate of soda 1/4 tsp salt For the 'Nougat' Filling 25g butter 100g caster sugar 30ml evaporated milk 100g Marshmallow Fluff spread 1 tsp vanilla extract a drop or two of pink food colouring You will also need. Italian Meringue - Rocky Road - Chocolate Ganache - Enjoy

I wish caster sugar were easier to find in America. It is difficult to find and if you can find it (on Amazon, for instance, it is almost prohibitively expensive. The shame of it is that American-style granulated sugar has a much larger grain size and doesn't behave quite the same in recipes, so you have to do a bit of experimenting. I know you can make your own in a food processor or blender; however, although you do end up with finer texture, it is inconsistent as compared to a commercially produced and sifted product.

Hi Jemma, sorry but it sounded like you said to bake at 150 degrees C which is lower than you usually recommend, whereas the video said 180. Which is correct? :) These do look amazing but there seems to be little cake compared to base and topping, so I'd be tempted to be greedy and make muffin-sized cupcakes to get some more cakey goodness: D: D

Can they be stored overnight? could you use the nougat filling for top instead of meringue(may be short of time) and do a strawberry puree core? I am making for a charity cupcake sale Friday morning but will obviously have to make Thur p. m. Thank you in advance

Hi Jemma. I have a cupcake question I'm making a large amount of cupcakes for children at the nursery where I work. I'm planning on a vanilla or chocolate cupcake iced with buttercream. How long in advance can I make them and how would I store them? Thanks

I would like to know why you use baking soda? I would always use baking powder as my stomach cant tolerate soda. I have often wondered why some cake recipes have both baking soda & powder.
