I made this but it turned out stodgy. I was afraid of overbaking it and the toothpick came out clean. Even though the top didn't bounce, the cake didn't jiggle anymore and the cake was starting to come away from the sides of the pan and the entire cake crust was golden brown. so I took it out of the oven. But after 15 min of taking it out of the oven the middle sunk slightly. How do I know if a dense cake is done baking? I baked this in a 13x9 glass Pyrex on 300F for 45 min. Maybe it needed 50-55m? An over done cake is just as bad as an underdone one though, sigh. The good thing is the icing was incredible And the flavors are also delisssssh. My friends still ate my cake even though I was sad about the texture: (: )

So I found an old magazine recipe, no picture, and for the topping it described (poorly) arranging the pecans in a hummingbird pattern. I had been hoping you'd do that so I could figure out what the heck it meant. I ended up doing pecans along the edge and a large letter in the center (first letter in DD's name.

Why do you choose to level your cakes? Its creating a lot of waste I use baking tin covers you soak in water first and the bake the cake and they always come out flat and you dont get an uneven bake as it cooks slower so you get an even rise and even bake and not crusty sides. Just wondered if theres an advantage to baking without the bands and then levelling the cake.

I'm gonna try this recipe but for my own spin i will reduce the fresh pineapple blend to a concentrated fruit puree, this will eliminate most of the natural water in the pineapple as well as produce a more concentrated pineapple flavor. Also this will give room for the addition of milk for a more classic cake taste. Thanks for sharing.

I do the same thing with my bananas, putting them in the freezer when super ripe. Always use mine for banana bread. My boys love my banana bread. Ive never made a hummingbird cake but this looks quite delicious. cant wait to try this cake. Some of my friends tried the pineapple hack but didnt work like all these videos we see

Hi Jenna, you are the best, I have changed my recipes from before for yours, they are excellent, but the greatest success I have had, with chocolate cupcakes, and lemon curds in my cakes. The only thing that has not worked for me are the macaroons, but that's before. I thank you for sharing your recipes. Greetings from New Jersey.

This looks amazing. For your Tuesday tips could you do a chocolate tempering one maybe please? I noticed a while ago (around Xmas I think it was) you had some moulded chocolates on a cake etc. Thanks again for all your lovely recipes. Ive not only made many but so have my daughter and her friend now too x

LOVED learning about this cake. I might leave out the bananas lol Looks yummy Jemma can you do a vanilla sponge and chocolate sponge that are both gluten free because WE always have that person who is gluten and I hate leaving them out of a party dessert time thanks: ) I love these sunday bake alongs: ) TFS

Hi Jemma and viewers. wondered if you could help a fellow baker. My icing sugar has gone hard/lumpy in the actual bag and takes forever to sift I know how to soften brown sugar but how do you soften icing sugar again if possible? I hope there's a solution Thanks everyone
