I have been experimenting trying to make a ginger-lemon creme brulee, but with limited success. not really getting the ginger flavor I am after. I have tried mincing it with a micro zester and simmering the mush in the creme, tried mincing crystalized ginger and adding to the creme. not really any joy. perhaps you have some ideas or perhaps would like to take this on? I can only guarantee my one like!

I love creme brulee too, but if I would add tea to it, I think I would prefer to use Orange Pekoe Tea over Earl Grey which is overly powerful in terms of a perfume flavor. I like Jasmine Tea, but I'm pretty certain it would not compliment the creme brulee, or be a clashing contrast. Where taste is concerned, we are all wired a bit differently, and that is good.

just tried this and it was rly tasty! i skipped the lemon and orange zest part tho. imo i felt like the heavy cream was too much? and the earl grey taste was strong. if possible, next batch i would cut down on the heavy cream and subst it w milk, and the earl grey, i-ll use 1 1/2 packet! :-)

Hypothetically, could these be Bain Maried in the oven with each ramekin wrapped in heat proof seran wrap? I seem to remember one of my head chefs over the years doing that. And I always wondered if it effected the product and saw it as cheating --

I wouldve never thought of adding tea to creme brulee. I enjoyed video of course but i prefer your -at home- cooking videos-i think they are more fun plus comments from aaron always complete the videos!

I've seen Maggie Beer put in a kitchen towel in the baking dish and pour boiling water over it, I guess it'd help with the sploshing.
I'd like to use green tea in this, which I like.

June needs her own show with Aaron popping in for the taste tests!
I found her when the pandemic started and she was beginning to cook in her own kitchen. Love it!

I think it would be really sweet to surprise Chelsea with a day to herself. She isn-t usually seen in episodes and works so hard editing videos all the time!
