Hi, you missed out on the cumin and fresh parsley. Don't worry about using good olive oil, that type of fat does not make you fat. It actually does the opposite PLUS the flavor is great as well. I would recommend you try to add the seasonings to your hummus and juice it up a bit w/ the oil.
I live in Europe and have been to the Arab countries and I like hummus as well. Plus I graduated from CIA in Hyde Park.

so I have chickpeas that are dried and in a bag (like you would find beans, because that's all we have here in Mexico apparently, do you know any special tricks to boiling them up so they're more like what comes in the can?

Tahine brings a nutty flavor, so you could just add some sesame oil or even almonds. But tahine last a long time in the fridge and it's also very good in cakes. But it isn't for everyone, some people find it bitter.

Your recipes could be ok, but you need to change the way you present them. Get a new act. You don't need to go all Martha on us, just do something different in the way you present yourself!

do you have to add the tahni? I am the only one in my house who will eat the hummus hate to buy something that I may end up throwing away because It never got used and went bad.

-kajiq270 Yes! Soak them overnight with a pinch of baking soda, then drain and boil in fresh water until they are soft. It might take an hour or two.

Umm, you could try it without. I think it would still be okay, not the same, but still good. Might want to add a bit more olive oil.
